Pasta with Mepkin Mushrooms

Serves 4

Ingredients:

  • 2 Tbsp. butter
  • 2 Tbsp. Olive Oil
  • 3 shallots, minced
  • 1 lb Mepkin Mushrooms
  • 1/3 cup Red Wine
  • ½ cup of chicken stock
  • ¼ cup whipping cream
  • 2 teaspoons salt
  • ½ teaspoon of pepper
  • ¾ lb Pasta, Fettuccine or your favorite
  • ½ cup Parmesan cheese


Directions:

In saucepan heat butter and 1 tbsp. oil till foaming, add mushrooms and sauté for 3/5 minutes till lightly browned.

Add the stock, wine and cream simmer until thickened about 5 minutes. Add 1 teaspoon salt and pepper.

To large pot of boiling water add 1 tbsp oil and 1 teaspoon salt and cook pasta till al dente. Drain well. Toss hot pasta, mushroom sauce in bowl and serve with cheese on the side.
