Pasta with Mepkin Mushrooms
Serves 4
Ingredients:
- 2 Tbsp. butter
- 2 Tbsp. Olive Oil
- 3 shallots, minced
- 1 lb Mepkin Mushrooms
- 1/3 cup Red Wine
- ½ cup of chicken stock
- ¼ cup whipping cream
- 2 teaspoons salt
- ½ teaspoon of pepper
- ¾ lb Pasta, Fettuccine or your favorite
- ½ cup Parmesan cheese
Oyster Mushrooms in Red Wine and Cream Sauce
Ingredients:
- 2 Tablespoons of butter
- 2 Tablespoons of Olive Oil
- 3 shallots, minced
- 1 lb of Oyster Mushrooms (or whatever you have)
- 2 tablespoons of Red Wine (add more if you prefer)
- ½ cup chicken broth
- ¼ cup whipping cream
- 2 teaspoons salt
- ½ teaspoon pepper
- ¾ lb Fettuccine pasta
- Parmesan Cheese
Mushroom Quiche
Serves 3-4
Ingredients:
- 1 – 9 inch pie crust
- 5 large eggs
- ¾ cup of milk
- ½ teaspoon of salt
- ¼ teaspoon of pepper
- 5 ounces of sliced mushrooms
- 1 Tablespoon of olive oil
- ¼ cup of dry white wine
- ½ teaspoon of garlic
- 4 ounces of Swiss cheese, shredded
Pappardelle with Mepkin Mushrooms
Serves 6
Ingredients:
- 2 teaspoons olive oil
- ½ cup finely chopped onion
- ½ cup diced shallots (about 2)
- 2 garlic cloves, minced
- 12 ounce oyster mushrooms or a mixture of different mushrooms
- ½ cup dry white wine
- 1 teaspoon chopped fresh oregano
- ½ teaspoon salt, divided
- ½ teaspoon freshly ground black pepper, divided
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 ½ cups milk
- ½ cup low sodium chicken broth
- 1 ½ cups (6 ounces) shredded Fontina cheese or similar type, Gouda works well too
- 12 ounces uncooked pappardelle (wide ribbon pasta) can use fettucine
- Chopped fresh parsley (optional)
Potato, Leek, Gruyère, and Mepkin Mushroom Gratin
Serves 10
Ingredients:
- 4 tablespoons (½ stick) butter
- 1 pound mushrooms, halved if large
- 1 tablespoon minced garlic
- 4 cups thinly sliced leeks (white and pale green parts only; about 4 large)
- 1 tablespoon minced fresh thyme
- 1 ¾ cups canned low-salt chicken broth
- 1 ¾ cups whipping cream
- ¼ cup dry white wine
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 3 ¾ pounds russet potatoes, peeled, thinly sliced into rounds (about 8 cups)
- 2 ½ cups grated Gruyère cheese (about 10 ounces) Guoda works well too.
